Under The Sea Jello Salad

Oh Sanp Girls! Under the Sea Jello Salad makes a comeback for summer....perfect for a hot day! Under The Sea Salad 1 (16 0z) can pear halves in syrup, undrained 1 (4 srvg) lime flavored Jello 1 cup boiling water 1/4 cup cold water 1 TBSP lemon juice 1 pkg (8 oz) cream cheese, softened 1/4 TSP ground ginger seedless red grapes, optional salad greens, optional Drain the pears, reserving 1/2 cup syrup. Dice the pears and set aside. Dissolve the Jello in the boiling water. Add reserved pear syrup, cold water, and lemon juice. Measure 1/4 cups Jello mixture into a 4X8 loaf pan. Chill until set but not firm. Place the cream cheese in a blender. Blend at low speed until smooth and creamy. Very slowly add the remaining Jello mixture and ginger. Blend at low speed until smooth, about 15 seconds. Chill until thickened. Fold in pears. Spoon over gelatin in pan. Chill until firm, about 2 hours. Un-mold and serve alone or garnish with crisp salad greens, grapes and additional pears. Serve cold and enjoy!
